Making of Thai coconut rice hot cakes recipe with cream, batter

For Cake Batter
- 400 gm rice flour
- 200 gm refined flour
- 2 cans cocnut cream
- 1 tsp salt
- 2 tbsp oil
- 100 ml water For Sweet Batter
- 2 pandana leaves (for flavour)
- 2 cans of coconut cream
- 1 tbsp
- 1 cup white sugar
For Toppings
- 100 gm pumpkin (julienne)
- 100 gm Taro( julienne)
- 100 gm carrot
- 20 gm Sesame seeds
- 1 sprig spring
- Onion(chopped)
- 50 gm sweet corn (boiled)
Method of preparing Coconut Rice Hot cakes Recipe

Step 1: Mix together the ingredients for cake batter. Separately, mix together the ingredients for the sweet batter. Blanch carrots, pumpkin and taro and keep aside.
Step 2: Pre heat the Thai hot cake machine (use a mini-idli or aapam maker if you don't have one). Pour rice batter into the machine and cook for two to three minutes. Keep it covered. After a while, open the lid and add sweet batter on top. Garnish with blanched carrots, pumpkin and taro and serve hot.
