Thai Style Chicken and Coconut Soup

Ingredients
- Peel of one lemon (scrape the layer carefully to avoid including the bitter pithy part)
- 500 ml chicken stock
- 2 inch lemon grass, slightly crushed
- 4 tbsp fish sauce
- 2 cups coconut milk
- 100 gms chicken breast, cut into bite sized pieces
- 2 tbsp lemon juice
- 100 gms button mushrooms, finely chopped (optional)
- 4-5 crushed red chillies
- Dhania leaves for garnishing
Method
1. Bring the stock to a boil and add lemon peel, lemon grass, fish sauce and lemon juice stirring continuously.
2. Reduce heat and add coconut milk along with the chicken and mushroom pieces.
3. Again bring to a boil, reduce heat and simmer for two minutes or until the chicken and mushrooms are completely done.
4. Garnish with red chillies and dhania leaves.
5. Serve hot with any Thai rice preparation.
