Chinese style Laksa Soup
from: AnuIngredients
• Veg
stock 1 litre
• Maggi coconut milk 800ml
•
Kaffir Lime leaves - 50 gms
• Turmeric 30
gms
• Lemon grass 50 gms
• Chopped
onions 100 gms
• Laksa paste 100 gms
•
Chopped coriander roots 100gms
• Oil 50
ml
• Black pepper 5 gms
• Salt 10
gms
• Bird eye chilli - 25 gms
• Chicken
stock - 1lt (if making Non veg soup)
Condiments
•
Fried onions
• Noodles boiled
•
Boiled eggs diced
• Bean sprouts
•
Lemon wedge
• Tofu cubes
•
Coriander sprigs
• Chilly flakes
•
Fried garlic
• Crushed peanuts
•
Chicken/prawn diced (if making non veg)
Method
Heat oil. Add Laksa
paste and turmeric to the pan. Cook till the raw flavor of the spices is gone.
Add lemon grass, kaffir lime, chopped chillies and coriander
roots.

Cook further along with the spices. Add stock
and simmer. Finish the soup with salt, pepper and fish sauce.
Add coconut
milk and allow it to simmer till it reaches a soup like consistency. Serve with
a dash of lemon juice along with the condiments. Laksa is a popular spicy noodle
soup which is a merger of Chinese and Malay elements.
