Chinese Spiced Shredded Black Bean Chicken

Ingredients

  • 250 gms chicken, boneless
  • 1 tbsp soy sauce
  • 1 medium-sized onion
  • 1 medium-sized capsicum
  • 1/2 red capsicum, medium sized
  • 1/2 yellow Capsicum, medium sized
  • 1 inch ginger
  • 3- 4 cloves garlic
  • 2-3 green chillies
  • 2 tbsp hot black bean sauce
  • 1 tbsp chilli sauce
  • 2 tbsp cornstarch
  • 1 cup chicken stock
  • 4 tbsp oil
  • Salt to taste
  • A pinch of ajinomoto

Preparation Method

1.

Cut chicken into thin strips. Mix chicken with light soy sauce, dry
sherry and salt to taste. Leave aside to marinate for half an hour.
2. Peel, wash and slice onion. Wash, deseed and cut capsicum into strips. Peel and finely chop the ginger and garlic.
3. Heat oil in a wok, add chopped ginger, garlic, green chillies and stir fry for some time.
4.
Add marinated chicken, onion, capsicum, hot black bean sauce, chilli
sauce and soy sauce and continue to stir fry for two to three minutes.
5. Add chicken stock and
cornstarch.
6. Toss and serve hot.
