Chinese Tofu and Egg Appetizer
from: Caixia Bu
Ingredients :
Silken tofu
Appx. 2 preserved duck eggs
Rice wine vinegar
Cilantro, for garnish
Directions :
1. Boil the soft tofu in a pot with some salt for a few seconds
2. Cut the silken tofu into bite size pieces and arrange nicely on the serving dish
3. Cut preserved duck eggs, its easiest to do this with string, but if you dont have that you can use a knife
4. Arrange eggs on the tofu, drizzle on the vinegar, and add cilantro
5. Serve cold
