Making of Thai coconut rice hot cakes recipe with cream, batter

Ingredients

For Cake Batter
  • 400 gm rice flour
  • 200 gm refined flour
  • 2 cans cocnut cream
  • 1 tsp salt
  • 2 tbsp oil
  • 100 ml water For Sweet Batter
  • 2 pandana leaves (for flavour)
  • 2 cans of coconut cream
  • 1 tbsp
  • 1 cup white sugar
For Toppings
  • 100 gm pumpkin (julienne)
  • 100 gm Taro( julienne)
  • 100 gm carrot
  • 20 gm Sesame seeds
  • 1 sprig spring
  • Onion(chopped)
  • 50 gm sweet corn (boiled)
Method of preparing Coconut Rice Hot cakes Recipe


Step 1: Mix together the ingredients for cake batter. Separately, mix together the ingredients for the sweet batter. Blanch carrots, pumpkin and taro and keep aside.

Step 2: Pre heat the Thai hot cake machine (use a mini-idli or aapam maker if you don't have one). Pour rice batter into the machine and cook for two to three minutes. Keep it covered. After a while, open the lid and add sweet batter on top. Garnish with blanched carrots, pumpkin and taro and serve hot.
