Cooking Chinese udon Noodle soup recipes wt sea bass, dill, Rice Noodles

Ingredients:
  • 1 kg sea bass or red snapper (clean and slice into 5-inch cubes)
  • 1 onion (finely sliced)
  • 1 sprig spring onion (cut into chunks)
  • 100 gm dill (thinly sliced)
  • 300 gm rice noodles (boiled)
For the marinade:

100 gm shrimp paste
50 gm fresh turmeric
200 gm galangal (Thai ginger) juice

Peel and chop the ginger and blend into a paste with water. Squeeze this through a strainer or muslin cloth to extract the juice), 5 tbsp fish sauce, 5 tbsp oyster sauce.

Method of making Udon Rice Noodle Soupe Recipe


Mix the marinade ingredients together, coat the fish and leave overnight. The galangal juice helps firm up the fish so that it doesn't break during frying. Sauté onions and spring onions in light oil. Sauté the dill separately. Pan fry the fish till golden brown.

To serve, make a bed of noodles in a bowl, top it with dill and onions. Place four to five pieces of fish on top and pour in a generous helping of the banana flower salad dressing from the salad mentioned above. Serve hot, ideally without chopsticks.
