Traditional french food & recipes using mirepoix (mire poix)
from: Clyde- 100 gm Mirepoix (onion, garlic, celery, leeks, carrots, bayleaf and peppercorns roughly chopped))
- 100 gm prawn shells
- 50 gm tomatoes
- 50 gm tomato puree
- 500 ml fish stock
- 1 whole shrimp
- 10 gm butter
- 10 gm flour
- 100 gm roux (mix together equal amounts of flour and butter to form a paste and then cooking it until it turns slightly brown)
- 10 ml cream.
