low-cal recipes - Brown Bread Pudding (Indian Style )

Ingredients
  • 3-4 brown bread slices
  • 1/2 cup pineapple juice
  • For Custard
  • 3 cups low-fat milk
  • 3 tbsp custard powder, dissolved in 1/2 cup cold milk
  • 2 1/2 to 3 tbsp sugar
  • 1 apple, peeled
  • 1 banana or papaya, cut into small pieces
  • 1/2 cup grapes or any
  • seasonal fruit, halved

Topping

  • 2 choco-chips or grated chocolate

Preparation Method

1. Cut the sides of bread, then slice it into four pieces and arrange them at the bottom of the serving dish.

For juice, extract the juice of pineapple and filter it through muslin
cloth. Add a little sugar if required or heat the juice for three
minutes. Pour this juice over the bread till it becomes moist.

For custard, heat 3 cups of low fat milk. When it boils, add custard
dissolved in 1/2 cup milk. Keep stirring continuously. Add sugar, and
remove from fire after the custard turns thick. Set aside.

4. Spread bananas, apple, peaches or other fruits on soaked bread. Spread the grapes last.

5. Pour custard over the bread, let it cool.

6. Top with chocolate and serve.

Brown bread is rich in fibre, good for digestion. Natural fruit is healthier than preserved fruit.
