Non-fried(healthy appetizers): Spinach Puff

from: Shakuntala Saraf

Spinach Puff

Preparation time: 15 minutes

Cooking time: 15 minutes

Serves: 10-12

For filling:

  • 1 cup spinach, finely chopped

  • 1/2 cup spring onion, finely chopped

  • 1/2 tsp garlic paste

  • 2 tsp ginger, chopped

  • 2 tsp green chilli, chopped

  • 1 tbsp sesame seeds

  • 2 tsp olive oil

  • 1 tsp roasted coriander seeds, semi-ground

  • 1 tsp sugar

  • 2 tsp lemon juice

  • 2 tsp pine nuts

  • salt

    Method:

Heat the oil. Sauté onions, green chillies, garlic and ginger for a few
seconds. Cook the spinach until it is dry. Add salt, sugar, sesame
    seeds and pine nuts.

    For the dough:

  • 1 cup flour

  • 1 tsp sugar

  • 3/4 cup milk

  • 1/2 tsp yeast

  • 1/2 tsp salt

  • 3 tsp oil

    Method:

Mix all the ingredients. Knead them into a dough by adding as
much milk as is required. Allow the dough to rise by keeping it aside
for 3-4 hours. Take a small portion of the dough and roll it out into a
perfect circle, like a roti. Put 1 tsp of spinach filling in the centre. Fold the roti as shown in the picture. Bake the folded roti in the oven until it turns golden-brown.

    Chilli sauce:

  • 4-6 Kashmiri chillies (soaked in 1/2 cup water)

  • 1/2 tsp garlic paste

  • 2 tsp lemon juice

  • 1 tsp sugar

  • 1 tsp parsley, finely chopped

  • 2 tsp olive oil

  • salt

    Method:

With the exception of parsley, grind all the ingredients in the liquidiser. Now add parsley to the sauce.

    Serving:

    Serve with chilli sauce.
