Summer Salad Special

Herb Grilled Tomato, Kiwi and Chevre on Rucolla bed


Ingredients:

  • 70 gm Rucolla lettuce

  • 20gm fresh plum tomato

  • 2 gm Oregano

  • 20 gm Kiwi 

  • 50 gm Chevre cheese

  • 10ml olive oil

  • Salt

  • Pepper

  • 10 ml lemon vinaigrette



Method: 


Slice the tomato in even size. Marinate it with fresh herb, salt, pepper, extra virgin olive oil. Grill the tomato slice slightly in a griller and let it chill for a few hours. Peel and slice the kiwi and toss it in vinaigrette. Arrange the Rucolla leaves on a plate and top it with the cold tomatoes, kiwi and come Chevre cheese. Sprinkle olive oil on top and serve.
