Roasted Marinated Prawns recipe with herb Olive Oil

from: Pinaud and Anupam

Ingredients
  • 16 prawns
  • 30 ml lemon juice
  • 35 ml white wine
  • 50 ml olive oil (herbed)
  • 20 gm lettuce
  • 20 gm asparagus tips, poached
  • 20 gm French beans, poached
  • 10 gm cherry tomatoes
  • 20 gm babycorn, poached
  • 10 gm zucchini, poached
  • 5 gm white pepper powder
  • Salt to taste


Method of preparing ROASTED MARINATED PRAWNS WITH HERB OLIVE OIL AND CRUNCHY VEGETABLE REMOULADE
  1. Marinate prawns with lemon juice, salt, white pepper powder, white wine and herb olive oil for half an hour.
  2. Roast the marinated prawns.
  3. Toss lettuce, asparagus, babycorn, french beans, cherry tomatoes and zucchini with herb oil, salt and white pepper powder.
  4. Place the lettuce mixture in the centre of a plate. Arrange roasted prawns around it and serve along with the above crunchy vegetables.
