Italian Style Corn Minestrone Soup

Ingredients
- 1/2 cup cooked corn
- 3 button mushrooms, finely chopped
- 2 large tomatoes
- 1 tbsp butter
- 2 tbsp chopped onion
- 1/2 cup spinach, finely chopped
- 1/4 cup cucumber, finely
- chopped
- 4 cups water
- Salt to taste
- 2-3 tbsp grated cheese for garnishing
Method
1. Blanch tomatoes, remove the skin and chop finely.
2. Heat butter in a pan and saut chopped onions for a few seconds.
3. Add the corn, chopped mushrooms and salt and cook for 3-5 minutes.
4. Add tomatoes, spinach, cucumber and water.
5. Bring to a boil and simmer for 20 minutes.
6. Stir and garnish with grated cheese.
