Feta Cheese recipes medley with Olives and Lemon dressing

Ingredients
  • 100 gm fresh garden lettuce (select varieties if available)
  • 100 gm feta/gouda cheese
  • 30 gm red/yellow/green capsicum
  • 15 gm green olives
  • 50 ml olive oil
  • 20 ml lemon juice
  • 10 gm garlic, chopped
  • 20 gm parsley, chopped
  • 5 gm black pepper, crushed
  • 1 sprig chives
  • Salt to taste


Making of
Green Leaves Medley with Feta Cheese, Sweet Pepper and Olives, Olive oil and Lemon Dressing
  1. Mix olive oil, lemon juice, salt, crushed black pepper and chopped garlic in a salad bowl.
  2. De-seed green olives. Chop them into two and add to the mixture.
  3. Slice red, yellow, green capsicum into thin long slices. And them along with the chopped parsley into the mix.
  4. Toss in lettuce into the mixture.
  5. Top with feta/gouda cheese and garnish with a sprig of chives.
