Italian style easy chicken recipes Chicken Breast Roast

PETTO DI POLLO ALLA CACCIATORA (Chicken breast 'hunter style')

Ingredients
  • 1 chicken breast, divided into 2 parts
  • 200 gm mushrooms, diced
  • 2 ripe tomatoes, diced
  • 2 garlic cloves, crushed
  • 50 gm parsley, chopped
  • 1 glass white wine (0.25 ounces)
  • 6 tbsp olive oil


Making of Italian style Chicken Breast roast

  1. Heat pan, add olive oil and garlic.
  2. Roast the chicken breast in the pan for a minute on each side.
  3. Season with salt and pepper.
  4. Add the mushrooms, cook for a minute.
  5. Add white wine and cook until it reduces to half its original quantity.
  6. Add tomatoes and cook for 3 minutes.
  7. Serve chicken first. Pour the sauce on the chicken, add parsley and some fresh olive oil.
