Italian style easy chicken recipes Chicken Breast Roast
from: paoloPETTO DI POLLO ALLA CACCIATORA (Chicken breast 'hunter style')
Ingredients
- 1 chicken breast, divided into 2 parts
- 200 gm mushrooms, diced
- 2 ripe tomatoes, diced
- 2 garlic cloves, crushed
- 50 gm parsley, chopped
- 1 glass white wine (0.25 ounces)
- 6 tbsp olive oil

Making of Italian style Chicken Breast roast
- Heat pan, add olive oil and garlic.
- Roast the chicken breast in the pan for a minute on each side.
- Season with salt and pepper.
- Add the mushrooms, cook for a minute.
- Add white wine and cook until it reduces to half its original quantity.
- Add tomatoes and cook for 3 minutes.
- Serve chicken first. Pour the sauce on the chicken, add parsley and some fresh olive oil.
