Indo American Recipe : Thyme Roasted Potatoes
from: MehtaIngredients:

1/3 cup olive oil
►
1 large potato (cut into long stripes)
►
1/2 tsp. coriander seeds
►
1/2 tsp. cumin seeds
►
1/2 tsp. mustard seeds
►
1 sprig thyme
►
Salt and pepper to taste.
►
Preheat oven to 375 degrees.

Method: On a sheet tray,
place the potatoes, sprinkle salt and pepper and drizzle olive oil on top. Bake
for approximately 20 minutes.
Heat two table spoons of olive oil in a pan on high heat. Add the spices and
let them infuse in the oil for 20 seconds. Add the potatoes, toss them in the
pan with some thyme. Add salt to taste. Sauté for a minute and they are ready
to eat.
