How to make Easy marinating chicken cheese quesadillas enchiladas recipe
from: Dronig Ingredients for marinating the chicken:
- Chicken 500 gms
- Beer 100 ml
- Oil 50 ml
- Pepper 2 gms (black pepper, corn-crushed)
- Salt to taste
- Oregano ½ tsp
- Cumin seeds ¼ tsp
- Malt vinegar 20 ml
Ingredients for the mix:
- Mozzarella cheese 100 gms
- Fresh coriander 10 gms
- Spring onions 10 gms
- Bell pepper 20 gms
- Corn 20 gms
- Flour/corn tortilla – 10 pieces approx
Method:
- Marinate the chicken with the ingredients listed above
- Sauté or grill the chicken and then chop it
- Mix the chopped grilled chicken with the cheese, add fresh coriander, spring onions, bell pepper and corn.
- Place this mixture in between flour/corn tortilla and grill it on a flat top
- Serve with tomato salsa and guacamole.
