Zucchini Recipes Baked Courgettes
from: Sheldon Boerner- 6 zucchini, sliced into two round shapes pieces each
- 6 slices of tomato
- 75 gm pasteurised cheese
- 40 gm potato, mashed
- 4 tsp balsamic vinegar
- Salt and pepper to taste
- Cheese for garnish
- Marinate tomato, cheese and mashed potato in balsamic vinegar, salt and pepper.
- Sandwich this mixture between two slices of zucchini.
- Top the covered slices with pasteurised cheese and bake for 12 minutes.
- Serve with Cajun mustard sauce (mustard sauce spiced with red chilly pepper and thickened with cream) and garnish with some parsley.
