Leftover Chicken recipes | Hearty thick chicken soup
from: SinhaIngredients
♦ Leftover chicken roast
♦ A cube of maggie
chicken stock
♦ Water-
½ liter
♦ Maida-½
cup
♦ Boiled potato mash-
3 tbs
♦ Diced fresh
vegetables like carrots, mushrooms, broccoli etc- 1 cup.
Method
Dissolve one cube of
chicken stock in 1.5 liters of water and make a thick stock. Use a little
cornflour or add some leftover potato mash to thicken the stock. Add vegetables
if needed. Coat chunks of roast with sufficient quantities of maida and shallow
fry. Add to the stock and season with salt and freshly ground pepper. Makes for
a thick warm winter afternoon soup.
