Christmas Leftover trifle pudding

♦ Assortment of leftover cakes and brownies -
2 1/2 cups
♦ Eggs-2
♦ Butter-70
gms
♦ Any
remaining macerated fruits (if left over).
Method
Take
all the plum cakes, rum cakes, brownies, etc that have piled up and crumb them
in a mixer. In a large bowl whip up two eggs with 60-70gms of butter and add
the mixed crumb mixture in. Fold gently until sticky and homogenized.
Add in any macerated fruits that haven't been used up yet. Line a mould with
butter paper and then with some bread slices without crusts. Drizzle 2-3 tbs of
sherry on top. Pour in the mixture and steam gently for about 20-30 mins or
until it springs back when touched.
Serve hot with cold custard or cream. No additional sugar should be needed
since each cake as adequately sweetened.
