Indian raita recipes with yogurt and coconut

- 1 beetroot, grated
- 1 tbsp coconut, grated
- 1 tbsp onions, chopped
- 1 tsp garlic, crushed
- 4-5 curry leaves
- Chilly powder to taste
- 1/4 tsp mustard seeds
- 1 tsp oil
- 1 cup yogurt or curd
- Heat oil in a kadhai and add the mustard seeds.
- After they splutter, fry the onions, curry leaves and the garlic till the mixture changes colour.
- Lower flame, add chilly powder.
- Add the grated coconut and fry for a minute.
- Add the beetroot and salt and let it cook for about two minutes.
- Add yogurt/ curd just before serving.
