Stuffed tomato dolmas - Arabic recipes

Ingredients
- 4 large, firm tomatoes
- 1 cup cooked rice, preferably basmati
- 1/4 cup raisins
- 1 onion, chopped
- 1/4 cup pine nuts, or almonds or cashews
- 125 gms ground lamb or mutton
- 1 tbsp parsley, chopped
- 1 tsp baharat spice
- Salt to taste
- Black pepper to taste
- 2 tbsp oil
- 2 tbsp grated cheese
Preparation Mehtod
1. Cut the tops off the tomatoes and reserve.
2. Scoop out the flesh and keep aside.
3. Heat oil in a pan and fry the onions till transparent.
4. Add the baharat and meat.
5. Brown the pine nuts, and then add the raisins, cooked rice, parsley, salt, pepper and tomato pulp. Stir-fry.
6. Fill the tomatoes with this mixture, replace the tops and brush with oil and top with cheese.
7. Place in a shallow baking dish and bake in a preheated oven at 180 C / 350 F for 20 minutes.
8. Serve hot with chicken or meat preparations. <
