Bread salad (Fattoush) - Arabic recipes

Ingredients

  • 1 small cucumber peeled and cubed
  • 2 tomatoes, cubed
  • 1 medium green pepper, sweet and diced
  • 1/2 small lettuce, torn into small pieces
  • 1/4 cup fresh parsley, coarsely chopped
  • 1/4 cup fresh mint, chopped
  • 2 spring onions or 1 medium onion, coarsely chopped
  • 1 khubuz / pita bread
  • 1-2 cloves garlic, crushed
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper to taste

Preparation Method

1. Prepare all the salad ingredients by washing them and cutting them into pieces of similar size.
2. Toast the pita bread until golden brown. Break it into pieces the same size as the salad pieces. Keep aside.
3. Prepare the salad
dressing

by mixing equal parts of olive oil and lemon juice (1/4 and 1/2 cup of
each to taste) with salt, black pepper and the crushed garlic.
4. Pour the dressing over the salad ingredients except the bread. Toss well. Chill for 30 minutes before serving.
5. Stir in the bread pieces immediately before serving so that they do not lose their crispness.
