Ingredients
- 600 gms boneless chicken
- 75 gms brown sugar
- 75 ml vinegar
- 45 ml soy sauce
- 1 tsp cornflour
- 1 capsicum
- 200 gms carrot
- 400 gms tomatoes
- 50 gms beans sprout
Method
1. Cut the chicken into long strips.
2. Cut capsicum and carrots into slices.
3. Blanch, peel, de-seed and cut tomatoes into slices.
4.
Blend together sugar, vinegar, soy sauce and cornflour. Pour into a
large casserole. Microwave on high for 3 minutes, stirring twice while
cooking.
5. Stir in capsicum, carrots, tomatoes and add the
chicken into the above mixture. Cover and microwave on high for 5
minutes. Stir and microwave for another 12 minutes, stirring every 4
minutes.
6. Add the bean sprouts and microwave on high for 2 minutes. Serve with boiled rice.
