Zucchini Recipes Baked Courgettes

Ingredients
  • 6 zucchini, sliced into two round shapes pieces each
  • 6 slices of tomato
  • 75 gm pasteurised cheese
  • 40 gm potato, mashed
  • 4 tsp balsamic vinegar
  • Salt and pepper to taste
  • Cheese for garnish
Method of preparing Baked Courgettes
  1. Marinate tomato, cheese and mashed potato in balsamic vinegar, salt and pepper.
  2. Sandwich this mixture between two slices of zucchini.
  3. Top the covered slices with pasteurised cheese and bake for 12 minutes.
  4. Serve with Cajun mustard sauce (mustard sauce spiced with red chilly pepper and thickened with cream) and garnish with some parsley.

QUESTION: The best pizza I ever ate was one I made myself from a recipe I found in the 1980s in either Family Circle or Woman’s Day magazine.
