ladyfingers Curry - (Indian Style Bhindi Sabzi)

Ingredients
- 250 gms fresh bhindis (ladyfingers)
- 1 tbsp pure cow's ghee
- Pinch of asafoetida powder
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 green chillies, finely chopped
- Pinch of turmeric powder
- Little saindha salt
- Coriander leaves, finely chopped (to garnish)
Wash
and pat dry the bhindis. Chop them into small round pieces. Lightly
heat ghee in a heavy bottomed pan or a lohe ki kadai. Add asafoetida
powder and cumin seeds. When the cumin seeds splutter, add the onions
and green chillies. Sauté on a low flame till the onions turn pink.
Add turmeric powder and cook for a minute. Add the chopped bhindis.
Toss it around on a high flame. Cover and cook on low flame for 10
minutes. Gently mix. Lastly, when the bhindis are done add a little
salt.
Mix gently. Garnish with coriander leaves. Serve hot with rotis.
