Want to do away with eggs from your diet? There are many reasons why a person would choose to avoid eggs in their baking. But then how does one bake great cakes, pastries and cookies?

Well, here are a few eggless baking tips that will come in handy when you're on a baking spree the next time...
 
There are various factors that play a key role in the success of your bakery product – kitchen temperature, humidity, altitude and varying moisture content of flour – all have their bearing, as does the type of pan you use.

 
Remember that shiny coated pans reflect the heat. They are the best choice for baking cakes. Grease and lightly coat the pan with a sprinkle of flour and cover the bottom of the pan with parchment or waxed paper.
 
Position the pans as close to the centre of the oven as possible.
