Microwave Ovens Usage and Energy Saving Tips

Fan-forced ovens are usually used in preference to conventional ovens.  The circulation of hot air throughout the oven ensures an even cooking temperature  which helps reduce cooking times and energy use. Improvements in oven designs, primarily intended to make them safer by reducing the external touch temperatures, have resulted in better insulation. The lower heat losses mean a more energy efficient appliance. 

Combination convection steam ovens (combi ovens) are two pieces of equipment in one — an oven and a steamer. The functions can be combined to produce a variety of cooking styles from blanching and poaching to baking and roasting. The ability to inject steam during the cooking cycle keeps food moist and maintains product volume (shrinkage can be reduced by up to 50%). The efficiency and versatility of the combi oven allows it to replace other items of kitchen equipment such as ranges, griddles, or steamers. The key energy saving feature of the combi oven is its very short preheat time (most models can reach 180oC in less than five minutes), allowing it to be switched off 
when not in use. Only one item of equipment is needed instead of having two or three working or on standby. (They’re also very easy to clean.)

Energy Saving Tips
  • Switch the oven on only when it’s required and shut it down after use. 
  • Operate the oven at the correct temperature for the product and cooking style. 
  • Work with full loads whenever possible. 
  • Keep the oven clean and regularly check the fit of the door and the condition of the seals or gaskets.
Commercial microwave ovens have the same advantages in the commercial kitchen as they do at home — they are a fast, efficient form of cooking and unequalled for reheating. They require no preheating time and can cook a wide variety of foods, especially vegetables, with improved quality and nutritional value. Heat is generated inside the product itself; it doesn’t have to be transferred from the appliance to the vessel and then to the product and so cooking times are reduced.

Energy Saving Tips
  • Keep the internal surfaces and especially the door seals clean to ensure safety and efficiency of the oven. 


  • Use the programming feature to store regularlyused cooking cycles to ensure consistent, ficient result 
  • Only use containers designed for microwave ovens — this ensures safe, energy efficient cooking.
