Simple Chickpea and Spinach Tapas Food, Easy tapas recipes dishes
from: Santego Ingredients
- 2 cups chickpeas
- 2-3 bunches (350 gm) fresh spinach
- 1 medium red capsicum, finely chopped
- 2 medium tomatoes, blanched and chopped
- 4 cloves garlic, crushed
- 2 tbsp finely chopped coriander leaves
- 1 tbsp finely chopped chives
- juice of two lemons
- ¼ cup virgin olive oil
- salt and pepper to taste

Method Chickpea and Spinach Tapas Food:
Soak the chickpeas overnight and cook till tender and set aside to cool. Wash and cook the spinach with a little oil in a frying pan till slightly wilted. Finely chop the spinach.
Mix all the ingredients in a bowl and toss together with the spinach. Chill in the refrigerator for two hours. Serve cold with toasted bread or as a salad. Serves four.
