Healthy Mixed salad of citrus fruits and greens
from: Mitali 170 gm granny smith apple (deseeded and sliced,
170 gm red apple (deseeded and sliced) 250 gm orange segments
20 gm prunes (cut into 8 equal pieces) 160 gm fresh romaine (clean)
160 gm fresh rucola (cleaned), 40 gm walnut (broken)
60 ml lime juice
15 gm mint (chopped)
80 ml honey
120 ml extra virgin olive oil »salt as per taste
50 ml red wine vinegar
60 gm pecorino shavings
50 ml balsamic vinegar
4 sheets of lavash with onion seeds »freshly milled black peppercorn.

Method: Place lime juice, fresh mint, honey, olive oil, red wine vinegar, balsamic vinegar in a bowl. Blend well with a stick blender. Check seasoning and consistency. Keep aside. Mix apples, orange segments, prunes, ruccola and romaine in a bowl andpour in the dressing. Ensure the ingredients are evenly tossed and coated. Check and adjust seasoning if required. Arrange it on a plate and top it with pecorino shavings, walnuts and black pepper. Garnish with lavash.
