Wild rocket salad recipe with pear, parmesan, lettuce, watermelon
from: GreshIngredients
- 40 gm rocket leaves
- 40 gms mix lettuce
- 40 gm watermelon
- 40 gm cantaloupe melon
- 40 gm honeydew melon
- 10 gm parmesan shavings
Dressing Ingredients
- 10 ml Balsamic vinegar
- 10 ml orange reduction (orange juice reduced on a slow flame in a pan)
- 30 ml olive oil, two think bread slices
- Salt and crushed pepper to taste
Method of Preparing Wild Rocket Salad

Clean the lettuce leaves under running water. Break the lettuce and keep it in ice-cold water to make it crunchy. Make scoops of all the three melons using Parisian scooper or a deep spoon. Cut the bread in 2cm x 2cm cubes and mix with a little bit of olive oil, paprika and chopped garlic. Bake it in the oven at 160 degrees Celsius for six minutes.
For the dressing
Take the balsamic vinegar in a bowl. Mix in the orange reduction and add the seasoning with a whisk. Incorporate the oil slowly into the mixture. Mix the dressing with the salad leaves and garnish with parmesan shavings, melon balls and garlic croutons.
