Cottage cheese skewers with piccante
from: MitaliIngredients :
500 gm cottage cheese cubes
150 gm bellpepper(3 colours)
150 gm tomato (diced) »salt to taste
black pepper (milled)
50 gm white bread crumbs
30 ml refined oil
200 ml tomato sauce
30 gm onion
4 gm red chilly flakes
5 gm garlic chopped
15 ml vinegar
40 ml olive oil
2 gm oregano
60 cherry tomato
150 gm figs
150 gm prunes
150 gm pineapple dices.

Method: Marinate the cottage cheese, bell peppers, tomatoes in vinegar, oil and the spices of the sauce (above). Skewer it alternating the coloured peppers, tomatoes and pineapple dices. Coat the arrangement with white bread crumbs. Cook it in a hot oven till lightly browned.
For sauce: Heat oil in a saucepan and sautι onions, garlic, red chilly flakes. Add vinegar and reduce. Add oregano and tomato sauce. Finish with finely chopped flat parsley.
