Stuffed Capsicum

Stuffed Capsicum

Ingredients

  • 6 to 8 capsicums
  • 2 potatoes, boiled
  • 5 to 6 garlic cloves, made into a paste
  • 3 tbsp ginger paste
  • 1/2 cup rice, boiled
  • 2 tomatoes, finely chopped
  • 1/2 cup paneer, finely chopped
  • 2 cheese cubes, grated
  • 1 tsp oil
  • Salt and pepper to taste

Preparation Method

1. Peel the boiled potatoes and mash finely.
2. Wash the capsicum and dry. Remove its stem and seeds.
3. Mix rice, mashed potatoes, salt, pepper, tomatoes, paneer, ginger and garlic paste and knead well.
4. Stuff the capsicum with this mixture and set upright in an ovenproof, greased plate.
5. Spread the cheese over the top of each capsicum and pour oil over each.
6. Bake in the oven at 350 degree Fahrenheit till the cheese bubbles. Serve hot.
