Benefits of using beetroot as healthy diet and way of cooking

Beetroot can be cooked in a number of ways. Baked and served with a creamy sauce, grated in a salad or used in a soup. Not many may know this, but even the top greens are nutritious. They are delicious and not easily available. If you are lucky enough to get some, boil the greens for a few minutes, then drain well and serve with a bit of butter and olive oil.

Beetroot has always been a popular root for salads. Although it can be eaten raw, it can cause digestive problems, so it's best to boil it first; but not too much, as it will lose its nutrients. Buy small beetroots, which have their whiskers intact and have two inches of stalk at the top. 

 To cook beets, first rinse them in cold running water. Don't cut them too close to the roots or they will bleed while cooking. When serving cold in salads, or where the recipe cuts for chopped or grated beetroot, peel away the skin with a potato peeler or a sharp knife. Any which way you eat beets; it's a good addition to your diet.
