How to make Corn and potatoes rosti salad recipe with Onion, cheese, butter
from: Kelly Ingredients
- 4 tbsp butter
- 1 medium onion chopped
- 1 green chilli, finely chopped
- 4 medium potatoes, peeled and coarsely grated
- ¾ cup yellow corn kennels, boiled or tinned
- 2 tbsp grated Cheddar cheese
- Salt and pepper to taste

Method of How to Make Corn and Potatoes rosti:
Heat butter in a thick frying pan and add onion. Cook for one-two minutes.
In a bowl, toss together potatoes, corn, salt and pepper. Lower the heat and spread potato and corn mixture evenly over the onions in the frying pan.
Sprinkle chilli and cheese on top. Cover the pan with a lid and cook for 10 minutes. Cook the other side until crisp.
Transfer rosti on a serving plate, cut into wedges and serve hot. Serves four.
